Anyone have any great recipes to share?  Here's one that we tried tonight that was really good!

Broiled Tilapia Parmesan

INGREDIENTS

    * 1/2 cup Parmesan cheese
    * 1/4 cup butter, softened
    * 3 tablespoons mayonnaise
    * 2 tablespoons fresh lemon juice
    * 1/4 teaspoon dried basil
    * 1/4 teaspoon ground black pepper
    * 1/8 teaspoon onion powder
    * 1/8 teaspoon celery salt
    * 2 pounds tilapia fillets


DIRECTIONS

   1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
   2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
   3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

**By the way, read the reviews!  I did, and decided to add some bread crumbs, decrease butter, omit celery salt, and add some other spices.  It was really good!

We had this one tonight from cooks.com, it was YUMMO!  Makes a double batch, great for company, to send off to a neighbor, or to freeze for another night. Tongue

BARBARA ANN'S EASY ENCHILADAS

INGREDIENTS

1 lb. ground beef or round
1/2 c. chopped onion, or to taste
1/2 c. chopped green pepper, or to taste
1 can enchilada sauce
8 oz. milk
1 can cream of chicken soup
2 c. (or more as desired) grated Cheddar cheese
1 1/2 pkg. corn tortillas, about 18
1 can refried beans

DIRECTIONS

Saute ground round, onions and green pepper. Drain fat and set mixture aside. Combine enchilada sauce, milk, soup and 1 cup grated cheese. Soften tortilla shells in microwave or over steaming water for easy rolling. Spread each tortilla with approximately 1 tablespoon of refried beans; then spoon on some of the beef mixture.

Spoon on some of the cheese/soup mixture. Roll up the enchilada. It may be messy. Place in long casserole dish. Repeat until all tortillas are used. Pour extra sauce over enchiladas. Sprinkle with remaining cheese. Bake 30 minutes at 350 degrees. Usually makes 1 1/2 casseroles. Eat one, freeze one.

HAD THE TILAPIA ERIKA!!!!  LOVED IT!!!  Everyone loved it so I think I may have this on our "weekly menu" for a bit changing it up a little...fish is great to have on the menu for sure!
